FINK'S Hands Its Toastie Press to Three Chefs

By Elsie MacGregor
08.10.2026

FINK'S is handing its toastie press to three chefs and food writers, with a new toastie each month from October to December. Helen Graham goes first, with Cheddar, mozzarella, date and hawaij jam, sumac onions and amba on FINK'S white sourdough. Ben Slater follows on 2 November with a tartiflette toastie, and Jordon Ezra King brings a porchetta toastie on 1 December. Each is on at FINK'S Chats, Gillespie and Clissold House for a month. It's the bakery bringing local chefs it admires into its kitchen.

From 5 October, FINK'S is handing its toastie press to three chefs and food writers, one a month through to December. Each guest has developed their toastie with the bakery team on FINK'S own sourdough, and each runs for a month at FINK'S Chats in Lower Clapton, FINK'S Gillespie in Finsbury Park and FINK'S at Clissold House in Stoke Newington.

Helen Graham goes first, drawing on the Middle Eastern flavours of her cooking. Her toastie layers Cheddar and mozzarella with date and hawaij jam, sumac onions and amba, pressed in FINK'S white sourdough.

Chef and recipe developer Ben Slater takes over on 2 November with a tartiflette toastie of roasted potato, smoked ham hock, raclette and house-made onion chutney. Think posh French chip butty. Food writer, cook and author Jordon Ezra King closes the series on 1 December with a porchetta toastie, house-made rosemary garlic mayo and pickles.

The series is co-founders Mat Appleton and Jess Blackstone bringing local chefs into the bakery kitchen. "Helen, Ben & Jordon are chefs we really admire," say Appleton and Blackstone. FINK'S started as a neighbourhood café in Stoke Newington and now has sites across North London, plus a catering and events business. Its menus change with the seasons, built around sandwiches, salads, house-made cakes and pastries.

The toasties are at FINK'S at Clissold House, Stoke Newington Church St, London N16 9HJ (8am - 5pm); FINK'S Gillespie, 88 Gillespie Rd, Finsbury Park, London N5 1LN (7.30am - 3.30pm); and FINK'S Chats, 62 Chatsworth Rd, Lower Clapton, London E5 0LS (8am - 4pm). Helen Graham's toastie is available from 5 October, Ben Slater's from 2 November and Jordon Ezra King's from 1 December 2026.
