Tucked into two 17th-century canal houses on Keizersgracht, it's a guesthouse, a kitchen, a boutique, and somehow, none of those things quite cover it. What Carmen really is, is a home. Someone else's beautifully considered home that, for a little while, you get to borrow. Run by Carmen Atiyah de Baets and Joris ter Meulen Swijtink, every corner carries the kind of detail that only comes from people who genuinely care. About objects, about food, about the feeling a room can hold. The cafe draws you in. The shop keeps you longer than you planned. The accommodation makes leaving feel like the wrong decision. Amsterdam has no shortage of places to stay. Very few of them feel like this!

Where art stays for lunch. There are cafés inside museums, and then there is Fonda. Co-founded by Naiara and tucked inside the Stedelijk, Amsterdam's home for modern and contemporary art, Fonda earns its place in the building rather than simply occupying it. The marble staircase it inhabits dates to 1895, the same one that has witnessed Gilbert & George, that once became a giant slide in the hands of Alicia Framis. History has a way of settling into the walls here. By day, natural light pours in through the skylight. By night, the mood shifts - softer, more considered. Daniel Buren's line paintings line the walls. A Lawrence Weiner installation watches over it all. The food, seasonal and made in-house, feels as carefully chosen as everything else in the building. This is what it looks like when a cafe actually belongs somewhere.

Some places try very hard to feel relaxed. Oficina doesn't try at all. Co-founded by Zana Josipovic and Naiara Sabandar, this daily canteen, food design studio and shop in Amsterdam is one of those rare establishments that manages to be both the coolest room in the city and the most welcoming - no small thing, and no accident either. The food is unfussy but refined, rooted in both founders' backgrounds and quietly informed by influences from further afield. Dishes that feel personal without being precious. A menu that knows exactly what it is. Part canteen, part studio, part shop - Oficina resists easy definition and is all the better for it. The kind of place that reminds you why you fell in love with going out in the first place.

There are museums you visit for the art. The Stedelijk you visit for all of it. Adriaan Willem Weissman's 19th-century building is extraordinary in the truest sense, the kind of architecture that stops you before you've even made it through the door. Inside, the feeling only deepens. Space, light and scale working together in a way that makes everything hanging on the walls feel exactly where it should be. Come for Theo van Doesburg. Stay longer than you planned. Let the building do what great buildings do, make you see differently, even before the art begins. Amsterdam's most essential address. Has been for some time.

Every city has a park. Not every city has Westerpark. Tucked just beyond the canal belt, it has the easy, unhurried quality of a place that locals quietly claim as their own. Come in spring and you'll understand why. The daffodils arrive and suddenly everything feels possible. Wander, sit, do very little. Pick up something good to eat from one of the neighbourhood spots nearby and find a patch of grass to call yours for the afternoon. There is no agenda here and that, entirely, is the point. Amsterdam in spring is something special. Westerpark is where you feel it most.

All Weather. Always Worth It. There is something about Amsterdam's waterways in the rain - the reflections doubling, the light going silver, the city folding quietly in on itself - that feels more honest, more intimate than any postcard ever could. Umbrella up, collar turned, and suddenly you understand why people never really leave. In sunshine it's a different kind of magic. Bikes banked along the bridges, windows thrown open, the water catching the afternoon gold. Either way, the canals set the pace - and the pace is always exactly right. Walk them without a map. Get a little lost. Let one thing lead to another. This is Amsterdam at its most itself, in any weather, at any hour.
